About Luigi di Benedetto
Luigi di Benedetto grew up in the beautiful region of Salerno in Italy. His Italian roots were without a doubt the start of his love and passion for food. As a little boy, he spent hours in the kitchen and the vegetable garden, closely observing his mother and grandmother creating the most flavourful dishes.
A career as a chef was only logical. Although the golden thread in his culinary journey is French cuisine, he drew inspiration from many international cuisines. He worked all over the world, including Michelin restaurants in Tokyo, London and France.
Luigi describes Italian cuisine as pure and honest, based on only few fresh ingredients. And you'll find that purity at Spring Cafe Brasserie too. Chef Luigi and his team create dishes full of flavour, moreover inspired by French and Italian classics and made with pure ingredients.
